how do you guys eq your hats?

That depends on the way u want them to sound on the track and depends on the way the hihat himself sounds.
Usualy i cut all the low frequencies. even if i dont hear them, they might be there, so i play safe. And some times i cut arround 5000Hz when they sound a little bit too harsh, but its like i said, it depends of the hat and the track.

High pass them till they start to sound to thin in the mix, they'll have a lot of crap low end you cant hear but will muddy things up, then sometimes a little boost around 10k.

Like Squeezer said, it really depends on the sound you're starting with and what sound you're going for. Sometimes you want to lowcut all the lows, other times you want to boost the mids or take the harshness out. Sometimes a little distortion/saturation is just what the hat needs.
Or if you want it to be brighter, just layer it with another hat, that you pitch up a couple of semitones. Lots of possibilities.
Of course the easiest method is to just use a better sample, if you don't like the sound. ;)

I remember reading an interview of a very famous producer wich i cant remember the name right now, where he said that if a label didnt like the hats he would simply replace it for another one of his 7000 of his library :D:D:D

Use your ears and cut the low freqencies, theres often hidden rumble that will eat up headroom.
